Rinse quinoa under cold water. In a saucepan, combine quinoa with soy milk. Bring to a boil. Reduce heat to low, cover and simmer for 15-20 minutes until liquid is absorbed.
Adding flavor
Stir in coconut oil and cinnamon. Let it sit covered for 2-3 minutes.
Serving
Serve in bowls topped with fresh raspberries and blueberries. Optional additions: nuts or chia seeds, honey or maple syrup.
